Tenuta della Dainara Etna Bianco is born from a simple and slightly unconventional idea: to tell the essence of the northern slope of Mount Etna through a great Etna Bianco DOC

This area is famous above all for its reds. Not because whites have no voice, but because historically the choice here was to plant mainly Nerello Mascalese and Nerello Cappuccio, precisely because of the extraordinary quality of the reds. And yet the northern slope holds a different reading of Etna Bianco DOC: deeper, more mineral, with almost smoky hints of broom.

The vineyards are bordered by a large lava flow. The wine ages only in stainless steel tanks, with no passage in wood, but it still develops aromas that often recall wood: honey, smoke, flowering broom, a subtle note of hydrocarbon. It is the territory of this portion of Sicily, on the northern slope of Mount Etna, that makes our white wine of the volcano great. The vineyard speaks, while the cellar listens.

This Etna Carricante is fresh, savoury, precise on the palate. It has a lively acidic backbone, but not aggressive. It flows well, and yet it stays. Like certain Etna landscapes: you look at them for a moment, then you realise they have stayed with you.

Colour: straw yellow

Production area: Contrada Pontale Palino, Solicchiata, Castiglione di Sicilia, northern slope of Mount Etna

Soil composition: sandy soil, with abundant presence of lava stones

Training system: Alberello Etneo and Guyot

Harvest: hand-picking of the grapes in the second half of September

In the cellar: the wine ages for 6 months sur lies, in contact with the fine lees, to acquire greater complexity, structure and aromatic depth. This is followed by bottle ageing of up to 24 months.

On the nose: it expresses floral notes of yellow flowers, in particular broom and mimosa, accompanied by delicate shades of saffron.

On the palate: it stands out for a marked acidic freshness and a pronounced mineral imprint, typical of the volcanic soils of the northern slope of Mount Etna.
